Cherry Pineapple Surprise

This classic has universal appeal. Pineapple, cherry pie filling, coconut and pecans are stirred into a cake mix then baked.

5 cups (40 oz.) crushed pineapple, drained
5 cups (45 oz.) LUCKY LEAF Cherry Pie Filling**
1 1/2 qt. yellow cake mix
2 cups unsweetened shredded coconut
2 cups chopped pecans, toasted
1 lb. butter, melted

Method

  1. Dump drained pineapple into a shallow, full-size steamtable pan. Spread cherry pie filling evenly over pineapple. Sprinkle dry cake mix over cherry pie filling. Sprinkle coconut and pecans over cake mix. Drizzle melted butter over top.
  2. Bake in 350°F oven for 50 to 55 minutes or until cooked completely. Remove from heat and let stand 20 minutes before cutting into 24 pieces to serve.
