Fruited Brulee
Using a prepared pie filling as the fruit base and prepared pudding on top as the custard makes this version of a classic brûlée simple to prepare and dense with flavor and texture.
Ingredients
Servings: 24
Non-stick cooking spray
12 large egg yolks
3/4 cup whole milk
1 1/2 qt. Lucky Leaf® Premium Vanilla Pudding
3 cups Lucky Leaf® Premium Cherry Fruit Filling
1/3 cup fine granulated sugar
Method
- Preheat oven to 325°F (conventional).
- Spray insides of 24 6-oz. custard cups. Hold.
- In a bowl, whisk together egg yolks until smooth. Add milk and whisk until smooth. Stir in Lucky Leaf® Premium Vanilla Pudding and whisk to mix well. Hold.
- To Assemble: Portion 2 Tbsp. Lucky Leaf® Premium Cherry Pie Filling into the bottoms of each prepared custard cup. Portion 1/2 cup/4 oz. of custard mixture on top of fruit in bottom of each custard cup.
- Place custard cups in a single layer in a water bath with very hot water, 3/4 of the way up the sides of the custard cups (use 2 full-sized, shallow hotel pans, 12 custard cups per pan). Bake 30–35 minutes or until custard is set and heated through. Remove from heat and cool. Cover and refrigerate until ready to serve.
- To Serve: For each serving, sprinkle top of Fruited Brûlée with 1/2 tsp. sugar and heat top under a broiler or salamander until brown and bubbly. Remove from broiler and let stand until firm. Serve immediately.
