Honey Dijon Apple Butter Glazed Carrots

Tender and sweet, these tasty roasted carrots are a fabulous side dish that will complement any main course.

Ingredients

Servings: 24

1 cup (12 oz) Musselman’s® Apple Butter

1/3 cup Dijon mustard

1/2 cup (4 oz) olive oil

1/3 cup (12 oz) honey

1 tsp (0.2 oz) each salt and pepper

6 lb carrots, cut into 2-inch batons

1/2 cup (0.2 oz) finely chopped fresh cilantro

1 1/2 cups (6 oz) chopped toasted hazelnuts (optional)

 

Method

  1. Preheat oven to 400°F. Stir together Musselman’s® Apple Butter, Dijon mustard, olive oil, honey, salt and pepper until blended; toss with carrots until well coated.
  2. Arrange in single layer on large parchment paper–lined baking sheets. Roast, turning occasionally, for 25 to 30 minutes or until golden brown and tender.
  3. Serve 1/2 cup per serving: sprinkle each serving with 1 tsp cilantro and 1 tbsp hazelnuts (optional).

Tips:

  • Substitute parsley or chives for cilantro.
  • Substitute pumpkin seeds, almonds or pecans for hazelnuts.
