Spicy Cauliflower Breakfast Tacos

These healthy and delicious breakfast tacos are a great way to rev up at the start of any day.


Spicy Cauliflower Breakfast Tacos

Ingredients

Servings: 24

6 heads cauliflower (6 lb), cut into small florets

3 cups (2 lb 4 oz) Musselman’s® Apple Butter Fusions Creamy Horseradish flavor, divided

1/2 cup (4 oz) olive oil

12 cloves garlic (2.4 oz), minced

24 eggs, beaten

1 tsp (0.2 oz salt, 0.1 oz pepper) each salt and pepper

1/2 cup (4 oz) butter

6 cups (2 lb 10 oz) diced tomatoes

3 cups (1 lb) sliced red onions

1/2 cup (2 oz) pickled jalapeño peppers

6 tbsp (0.5 oz) finely chopped fresh chives

48 flour tortillas (7-inch), warmed according to package directions

Method

  1. Preheat oven to 450°F. Toss together cauliflower, Musselman’s® Apple Butter Fusions Creamy Horseradish flavor, olive oil and garlic. Arrange on parchment paper–lined baking sheets in single layer. Bake, turning occasionally, for 20 to 30 minutes or until golden brown and tender.
  2. Meanwhile, whisk together eggs, salt and pepper. Melt butter in large nonstick skillet or rondeau set over medium-low heat. Pour in egg mixture; cook, stirring frequently, for 8 to 10 minutes or until eggs are set and soft curds have formed.
  3. Assemble 2 oz cauliflower, 1 1/2 oz scrambled eggs, 2 tbsp tomatoes, 1 tbsp sliced red onion, 1/2 tsp jalapeños, and 1/4 tsp chives in each tortilla. Serve 2 tacos per serving.

Tip:  Add chicken or steak to tacos, if desired.
